Pumpkin Cinnamon Granola

Fall is hands down one of the best seasons for creating new and old holiday favorite recipes. As the leaves begin to change, the day’s gets shorter, and the weather gets cooler, you know is the perfect time to start using your oven. I’ve always connected the holiday season with memories in the kitchen with family and friends. For many of us, it’s a time filled with parties, potlucks, and big holiday dinners.


Pumpkin is truly one of the most popular fall time favorites around the holidays! I personally love pumpkin because of its versatility in the kitchen! Pumpkin spice latte, pumpkin bread, pumpkin cereal, pumpkin bagels, pumpkin cookies and everything in between! Today, I wanted to try baking something I’ve never made before, granola! Guys, if you have never made granola at home, please try it, it’s so easy!



As with all of my recipes shared on Abundant Living, my pumpkin granola is infused with the warm and spicy flavor of Young Livings Cinnamon essential oil. Most commonly known as a powder, cinnamon essential oil is the purest form of this amazing spice. Cinnamon oil contains many immune boosting properties including anti-viral, anti-fungal, and digestive support.



As always, have fun with this recipe and make it your own! I have kept it very simple and basic, but you can add so many more elements to this granola once you have made your base: Try adding your favorite dried fruits, pumpkin seeds, use pecans instead of almonds, or add some chocolate chips! I hope you enjoy this sweet and crunchy recipes as much as I have!


Ingredients

1 Cup Almonds

2 Cups Old Fashioned Rolled Oats

¼ Cup Honey

¼ Cup Brown Sugar

1/3 Cup Pumpkin Puree

2 Tbsp. Extra Virgin Olive Oi

2 Tsp Vanilla Extract

5 Drops Young livings Cinnamon Essential oil

Directions

Preheat oven to 325 degrees

Mix oats and almonds in a bowl, set aside

Mix remainder of ingredients together

Add wet ingredients to oats and almonds

Coat/ Mix well

Spread mixture on to a lightly grease cookie sheet

Bake 15 minutes/ remove and mix

Bake an additional 15 minutes

Remove from oven and let cool (Your granola will become crunchier as it cooks)

Add additional items such as dried cranberries, apples, chocolate chips or pumpkin seeds and enjoy

Store in an air tight container in a cool dry place

Cooking Tips 

Always taste test your recipes drop by drop. Essential oils are extremely powerful to the pallet and may vary based on preference. Although a recipes calls for three drops, this may seem too strong for some, so add slowly and as needed!

Always use glass or stainless steel when creating your favorite beverage.  Avoid using plastic water bottles, Styrofoam and Solo cups.
